  • 2 c. Bake it all mix
  • 2 x Large eggs
  • 2/3 c. Buttermilk or possibly sour lowfat milk*
  • 1/2 c. Sugar
  • 1/3 c. Orange peel -- grnd**
  • 1/2 c. Raisins -- minced
  • 1/2 tsp Baking soda
  • 1/3 c. Orange juice
  • 1/4 c. Sugar

Directions

  1. * To make sour lowfat milk, place 2 tsp. vinegar in measuring c. and fill to 2/3 c. mark with lowfat milk.**Or possibly finely minced. Break Large eggs into a bowl; beat well. Stir in buttermilk, 1/2 c. sugar, orange peel and raisins. Add in Mix and soda. Beat well. Pour into an 8 by 8 by 2-inch pan, bottom rubbed with shortening. Bake in a 350 F. oven about 30 min. Combine orange juice and 1/4 c. sugar, stirring to dissolve sugar. Pour over warm cake.
  2. Cold.
  3. Yield: One 8-inch square cake
