Ingredients
- 1 lb cucumbers peeled and minced
- 1/2 lb tomatoes minced
- 4 x green onions chopped
- 1/2 c. fresh mint minced fine
- 1/2 c. fresh parsley minced fine
- 3 Tbsp. lemon juice
- 2 x garlic cloves crushed
- 1 c. plain lowfat yogurt black pepper to taste
Directions
- Mix the lemon juice, yogurt, garlic, pepper, mint and parsley together.
- Pour over cucumber and tomato mix and stir. Serve within an hour for best taste.
