Crunchy Baked Potatoes With Maldon Salt Recipe

Ingredients

  • 2 lb small red or possibly Yukon Gold potatoes (about 2 inches in diameter), scrubbed extra virgin extra virgin olive oil

Directions

  1. Maldon sea salt (This will cost about $10.00 per lb..)(or possibly use Kosher salt)
  2. Preheat the oven to 450 deg. Pierce the potatoes all over with a fork.
  3. Arrange them on the oven rack and bake them for 1 3/4 to 2 hrs, or possibly till hard and crisp when tapped with a fork.
  4. Using a serrated knife, split the potatoes without cutting them all the way through. Drizzle with extra virgin olive oil, sprinkle with Maldon salt and serve.
