Ingredients
- 1 c. Cornmeal
- 1 c. Flour
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 3/4 c. lowfat milk
- 1 x Egg lightly beaten
- 1 c. Creamed corn
- 1 1/2 c. Cheddar grated
- 2 Tbsp. Butter
Directions
- Place a large cast iron skillet in the oven. Pre-heat to 425. Mix together all ingredients (except the butter). Add in the butter to the warm pan till just melted. Pour the mix into the warm pan. Bake for 25-30 min till lightly browned. Allow to cold slightly before serving.
- Serves 4 to 6.
