Ingredients
- 1 small handful assorted dried wild mushrooms
- 1 1/2 cups hot water
- 8 T (1 stick) butter, 2 T of which at room temperature
- 1 cup finely chopped celery
- 1 cup sliced shallots
- 3/4 cup chopped onion
- 4 garlic cloves, minced
- 3 cups sliced stemmed fresh shiitake mushrooms (about 6 oz)
- 3 cups sliced crimini mushrooms (about 6 oz)
- 3 cups sliced oyster mushrooms (about 4 1/2 oz)
- 2 T chopped fresh thyme
- 1/2 cup white wine
- 1/2 cup dry Sherry
- 1/4 cup all purpose flour
- 8 cups chicken stock or canned low-salt chicken broth
- 1/4 cup whipping cream (plus more to taste)
- salt to taste throughout recipe
- For garnish: handful of wild mushrooms and 2 T butter

%20I%20will%20incorporate%20into%20my%20Christmas%20Day%20tradition,%20since%20it%20will%20pair%20well%20with%20beef%20tenderloin,%20our%20standby%20(whereas%20I%20do%20not%20host%20Thanksgiving%20that%20often).%3C/p%3E%3Cp%3EOne%20of%20the%20nicest%20things%20about%20this%20soup%20for%20a%20big%20meal%20is%20that%20you%20can%20make%20it%20ahead%20in%20stages.%20I%20made%20the%20sauteed%20mushrooms%20and%20vegetables%20and%20froze%20them.%20The%20day%20before%20serving%20I%20made%20the%20soup%20to%20just%20before%20the%20cream%20is%20added.%20The%20next%20day%20I%20reheated%20it,%20simmered%20briefly,%20and%20then%20added%20the%20cream.%20I%20also%20sauteed%20some%20wild%20mushrooms%20to%20use%20as%20a%20garnish%20(ok%20actually%20Josie%20did%20because%20she%20is%20the%20BEST%20HELPER%20EVER%20when%20she%20comes%20for%20these%20events).%3C/p%3E%3Cp%3EEveryone%20who%20likes%20mushroom%20soup%20loved%20this%20(apparently%20John%20does%20not%20care%20much%20for%20mushroom%20soup%E2%80%93who%20knew?).%20I%20added%20the%20bare%20minimum%20of%20cream%20and%20then%20let%20people%20add%20cream%20to%20their%20individual%20tastes%E2%80%93we%20had%20people%20who%20like%20it%20creamy%20and%20people%20who%20like%20it%20barely%20creamy.%20The%20girls%20and%20I%20like%20a%20lot%20of%20chunks%20of%20mushrooms%E2%80%93but%20for%20someone%20like%20my%20dad%20I%20would%20puree%20the%20soup%20a%20bit%20more%20before%20serving.%20When%20he%E2%80%99s%20here%20for%20Christmas%20I%20will%20just%20avoid%20the%20big%20mushroom%20chunks!%3C/p%3E%3Cp%3ECream%20of%20Wild%20Mushroom%20Soup%3C/p%3E%3Cp%3EAdapted%20from%20Bon%20Appetit%3C/p%3E%3Cp%3EPour%20the%20hot%20water%20over%20the%20dried%20mushrooms%20and%20leave%20standing%20for%2015%20minutes,%20until%20the%20mushrooms%20are%20softened.%3C/p%3E%3Cp%3EMelt%206%20tablespoons%20butter%20in%20large%20pot%20over%20medium-high%20heat.%20Add%20celery,%20shallots,%20onion%20and%20garlic%20with%20a%20pinch%20of%20salt%20and%20saut%C3%A9%20until%20onion%20is%20translucent,%20about%208%20minutes.%20Add%20all%20fresh%20mushrooms%20with%20another%20pinch%20of%20salt%20and%20saut%C3%A9%20until%20cooked%20through%20and%20browning,%20about%2010%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20remove%20the%20rehydrated%20dried%20mushrooms%20(reserve%20the%20liquid)%20and%20chop%20them%20roughly.%20Add%20them%20to%20the%20pan.%20When%20the%20mushrooms%20are%20browned%20and%20starting%20to%20stick,%20deglaze%20the%20pan%20with%20the%20mushroom%20soaking%20water.%20Boil%20the%20liquid%20away%20until%20only%20a%20very%20little%20remains.%20(You%20may%20freeze%20at%20this%20point%20should%20you%20desire%20to.)%20Then%20add%20the%20thyme%20leaves,%20white%20wine%20and%20Sherry.%20Add%20another%20pinch%20of%20salt%20and%20boil%20vigorously,%20stirring,%20until%20the%20liquid%20is%20reduced%20to%20a%20glaze,%20about%206%20minutes.%3C/p%3E%3Cp%3EFreeze%20sauteed%20mushroom%20and%20veggie%20mix%20at%20this%20point%20for%20do-ahead%20ease%20(especially%20handy%20if%20you%20can%20only%20get%20a%20good%20assortment%20of%20fresh%20wild%20mushrooms%20on%20a%20particular%20day,%20which%20is%20what%20happened%20to%20me).%3C/p%3E%3Cp%3EMix%20the%20remaining%202%20tablespoons%20butter%20and%201/4%20cup%20flour%20in%20a%20small%20bowl%20until%20you%20get%20a%20smooth%20paste.%20Add%20this%20flour%20paste%20to%20the%20mushroom%20mixture%20in%20the%20pot;%20stir%20until%20the%20flour%20mixture%20melts%20and%20coats%20the%20vegetables.%20Gradually%20pour%20the%20stock%20in,%20stirring%20as%20you%20pour.%20Bring%20to%20a%20boil,%20stirring%20frequently.%20Reduce%20the%20heat%20to%20low%20and%20simmer%20until%20mushrooms%20are%20tender,%20stirring%20often,%20about%2010%20minutes.%20(You%20may%20chill%20for%2024%20hours%20until%20a%20hour%20before%20serving%20at%20this%20point.)%20Stir%20in%20cream%E2%80%93add%20it%20slowly.%20If%20you%20have%20any%20guests%20who%20do%20not%20like%20a%20creamy%20soup,%20add%20less%20and%20let%20others%20add%20more%20at%20the%20table.%20Taste%20for%20salt%20and%20pepper%E2%80%93if%20you%20used%20a%20homemade%20stock,%20as%20I%20did,%20you%20will%20need%20a%20pretty%20hefty%20pinch%20of%20salt.%3C/p%3E%3Cp%3EThe%20soup%20without%20the%20cream%E2%80%93it%20can%20be%20ahead%20the%20day%20before%20up%20to%20this%20point.%3C/p%3E%3Cp%3EPuree%20soup%20to%20desired%20consistency%20with%20an%20immersion%20blender%E2%80%93I%20prefer%20a%20much%20chunkier%20soup.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20melt%202%20tablespoons%20of%20butter%20in%20a%20medium%20nonstick%20skillet.%20Chop%20the%20wild%20mushrooms%20for%20garnish%20(we%20used%20chanterelles)%20and%20add%20them%20to%20the%20pan.%20Saute%20them%20until%20browned,%20sprinkling%20with%20salt.%20Sprinkle%20each%20bowl%20of%20soup%20with%20these%20sauteed%20mushrooms.%3C/p%3E){kind=link}
