Ingredients
- 1 x Cornish game hen, thawed Salt and pepper
- 1/4 c. apricot brandy
- 1/2 c. dry cranberries
- 1/4 c. balsamic vinegar
- 1/2 c. honey
- 1 Tbsp. butter Heat oven to 325 degrees.
Directions
- Wash hen and with a large, sharp chef's knife, cut through breastbone and open bird fully. Turn bird over and cut through back to split hen into two pcs. Wash bird, season with salt and pepper.
- Place hen pcs in a baking pan large sufficient to hold pcs in one layer.
- Bake at 325 degrees till cooked through and skin is browned, 45 min. Remove from oven, cover with foil and set aside.
- In a medium saute/fry pan over medium heat, hot brandy and cranberries.
- Carefully light a match and flame brandy. When flame subsides, add in balsamic vinegar and honey and cook, stirring, till thickened. Serve over hens.
