Directions

  1. Wash hen and with a large, sharp chef's knife, cut through breastbone and open bird fully. Turn bird over and cut through back to split hen into two pcs. Wash bird, season with salt and pepper.
  2. Place hen pcs in a baking pan large sufficient to hold pcs in one layer.
  3. Bake at 325 degrees till cooked through and skin is browned, 45 min. Remove from oven, cover with foil and set aside.
  4. In a medium saute/fry pan over medium heat, hot brandy and cranberries.
  5. Carefully light a match and flame brandy. When flame subsides, add in balsamic vinegar and honey and cook, stirring, till thickened. Serve over hens.
