Ingredients
- Chocolate Pretzel Cookies - Adapted From Bon Appetit, June 2004
- 2 1/2 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 cup butter, room temperature
- 1 cup sugar
- 2 large eggs
- nonstick vegetable oil spray
- 1 large egg white
- 1/2 cup raw sugar (also called turbinado sugar and available at natural food stores and most supermarkets and cooking stores)
- 20 oz. white chocolate (high quality makes a difference! I used Lindt), chopped

%20spend%20the%20weekend%20shopping,%20eating,%20hiking,%20relaxing...but%20it%20was%20so%20rainy%20and%20cold%20we%20shifted%20gears%20and%20headed%20to%20the%20outlet%20malls...yeah,%20outlet%20malls%20vs.%20Whistler%20-%20bet%20you%20didn't%20see%20that%20one%20coming!%20%20Actually,%20we%20just%20didn't%20want%20to%20drive%20all%20that%20way%20(4+%20hours)%20in%20the%20rain%20and%20spend%20our%20time%20indoors%20trying%20to%20see%20the%20mountains%20through%20the%20clouds.%20%20(This%20in%20NO%20WAY%20is%20the%20same%20as%20giving%20away%20tickets%20to%20The%20Eagles%20and%20staying%20home%20to%20eat%20carrot%20soup%20instead!)%20%20%20So%20shopping%20therapy%20it%20was...now,%20the%20mister,%20who%20doesn't%20even%20buy%20his%20own%20potty%20pants%20loves%20to%20shop,%20as%20long%20as%20I'm%20right%20there%20with%20him.%20%20He'll%20buy%20the%20most%20inane%20things,%20too...%22Hey,%20don't%20we%20need%20a%20new%20scrubber%20for%20the%20kitchen?%22%20and%20%22Don't%20you%20need%20some%20luggage?%22%20%20He%20has%20a%20thing%20for%20luggage.%20%20And%20he%20loves%20to%20look%20at%20wallets,%20he's%20had%20the%20same%20one%20for%20THIRTY%20years%20-%20because%20he%20just%20looks%20and%20never%20buys.%20%20But%20put%20him%20in%20the%20middle%20of%20the%20Nike%20store%20and%20look%20out...he's%20a%20whirling%20dervish%20-%20practically%20pushing%20people%20out%20of%20the%20way%20as%20he%20grabs%20shoes,%20shirts%20and%20shorts...stopping%20only%20to%20ask%20me%20what%20size%20he%20wears.%20%20We%20took%20a%20break%20from%20the%20action%20and%20treated%20ourselves%20to%20a%20chocolate%20dipped%20pretzel...it%20was%20good,%20but%20not%20as%20good%20as%20these%20homemade%20Chocolate%20Pretzels...because%20they're%20not%20really%20pretzels,%20they're%20chocolate%20cookies%20masquerading%20as%20pretzels!%3C/p%3E%3Cp%3EChocolate%20cookie%20dough%20rolled%20into%20%22snakes,%22%20twisted%20into%20%22bows,%22%20sprinkled%20with%20raw%20sugar%20then%20baked%20until%20firm%20-%20the%20smell%20of%20sweet,%20sweet%20chocolate%20will%20get%20your%20heart%20racing!%20%20Dipped%20into%20white%20chocolate%20and%20these%20little%20cookies%20go%20from%20an%20afternoon%20treat%20to%20an%20addiction.%3C/p%3E%3Cp%3EWhisk%20flour,%20cocoa%20powder,%20and%20salt%20in%20a%20medium%20bowl.%20%20Using%20electric%20mixer,%20beat%20butter%20and%20sugar%20in%20large%20bowl%20until%20fluffy.%20%20Beat%20in%20eggs%201%20at%20a%20time.%20%20Stir%20in%20dry%20ingredients.%20%20Gather%20dough%20into%20ball;%20wrap%20in%20plastic%20and%20chill%20for%20at%20least%20an%20hour.%20%20(Can%20be%20made%20a%20day%20ahead.)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20%20Spray%202%20baking%20sheets%20with%20nonstick%20spray.%20%20Cut%20off%20about%20an%20inch%20in%20diameter%20size%20portion%20of%20dough%20and%20roll%20into%20a%20%22snake%22,%20a%2016-inch%20long%20rope.%20%20To%20form%20a%20pretzel%20shape,%20lift%201%20end%20of%20rope%20and%20press%20about%201%201/2%20inches%20past%20center%20of%20rope,%20forming%20loop.%20%20Lift%20second%20end%20of%20rope%20and%20press%20about%201%201/2%20inches%20past%20center%20of%20rope,%20crossing%20over%20first%20loop.%20%20Transfer%20to%20baking%20sheet.%20%20Repeat%20with%20remaining%20portions%20of%20dough.%3C/p%3E%3Cp%3ELightly%20beat%20egg%20white%20in%20small%20bowl%20to%20loosen.%20%20Brush%20pretzels%20with%20egg%20white.%20%20Sprinkle%20with%20raw%20sugar.%20%20Bake%20until%20firm,%20about%2015%20minutes.%20%20Cool%20on%20racks.%3C/p%3E%3Cp%3ELine%202%20baking%20sheets%20with%20parchment%20paper.%20%20Melt%20white%20chocolate%20in%20double%20boiler%20set%20over%20simmering%20water;%20stirring%20occasionally,%20until%20smooth.%20%20Dip%20top%20half%20of%20pretzels%20into%20melted%20chocolate%20then%20transfer%20to%20prepared%20baking%20sheet%20to%20cool.%20%20Repeat%20with%20remaining%20pretzels.%20%20Let%20stand%20at%20room%20temperature%20for%2015%20minutes%20to%20allow%20chocolate%20to%20begin%20to%20set.%20%20Chocolate%20will%20be%20set%20in%20about%20an%20hour.%20%20Makes%2024%20pretzel%20cookies.%3C/p%3E%3Cp%3E%22Life%20is%20one%20big%20canvas;%20throw%20all%20the%20paint%20on%20it%20that%20you%20can.%22%20%20~%20Danny%20Kaye%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20Lemon%20Pound%20Cake%3C/p%3E%3Cp%3ETwo%20years%20ago:%20%20Candy%20Bar%20Pie%3C/p%3E){kind=link}
