Ingredients
- 2 ounce unsweetened chocolate *
- 2 c. lowfat milk scalded
- 1/3 c. sifted flour
- 1 c. sugar
- 1/4 tsp salt
- 3 x egg yolks slightly beaten
- 2 Tbsp. butter
- 1/2 tsp vanilla
- 1 x 9 in. pie crust baked
- 3 x egg whites stiffly beaten
- 6 Tbsp. sugar
- 1/4 tsp cream of tartar
Directions
- * NOTE: If using Hershey's chocolate, increase sugar to at least 1 1/4 c..
- Heat chocolate in scalded lowfat milk. Mix flour, sugar and salt; gradually add in lowfat milk and chocolate. Cook over medium heat, stirring constantly, till mix thickens and boils. Cook 2 min; remove from heat.
- Add in small amount of chocolate/lowfat milk mix to egg yolks; stir into remaining warm mix; cook 1 minute, stirring constantly. Add in butter and vanilla; cold slightly. Pour into baked pastry shell. Cold. Cover with meringue. Bake in moderate oven, 350 deg., for 12 15 minutes.
