Ingredients
- 2 tbsp. vegetable oil
- 1 c. minced onion
- 1 c. minced celery
- 1 clove garlic, chopped
- 1 1/4 lbs. grnd turkey
- 1 (15 ounce.) can tomato sauce
- 2 teaspoon grnd cumin
- 1 (15 ounce.) can pinto or possibly red kidney beans
- Salt and pepper to taste
- 2 teaspoon mild chili pwdr
Directions
- 1. In medium skillet over low heat, heat oil and saute/fry onion, celery and garlic till onion is golden brown. Add in turkey. Raise heat to medium and saute/fry till turkey is no longer pink. Stir to break up meat into small pcs.
- 2. Add in tomato sauce, chili pwdr and cumin; stir. Bring to boil, reduce to low, cover and simmer 20 min. Stir occasionally.
- 3. Fold in beans, salt and pepper to taste. Cover and simmer 30 min longer. Rest 5 min before serving. Top with chopped onion and grated Cheddar cheese. Serve with crackers or possibly over plain white rice.
