Ingredients
- 2 Tbsp. vegetable oil
- 6 x boneless chicken, thighs, skin removed
- 1 x carrot, minced
- 1 c. corn
- 1 x onion, minced
- 1 clv garlic
- 1/2 tsp pepper
- 1/2 tsp dry dill or possibly 1 sprig fresh dill
- 1/2 tsp salt
- 1 c. water Dumplings
- 1/2 c. flour
- 1/4 tsp salt
- 1 tsp baking pwdr
- 1 x egg
- 3/4 c. lowfat milk handful parsley
Directions
- Heat a saucepan over medium-high heat, add in the oil.
- Add in the chicken thighs and cook till browned, 2 min on each side.
- Add in the remaining stew ingredients, cover and simmer for 15 min.
- Dumplings:Combine all of the dumpling ingredients to make a lumpy dough.
- Drop the dough into the stew 1 tablespoonful at a time.
- Cover and cook for 10 min, or possibly till the dumplings are cooked through.
