Chicken Stew With Dumplings (2) Recipe

Ingredients

  • 2 Tbsp. vegetable oil
  • 6 x boneless chicken, thighs, skin removed
  • 1 x carrot, minced
  • 1 c. corn
  • 1 x onion, minced
  • 1 clv garlic
  • 1/2 tsp pepper
  • 1/2 tsp dry dill or possibly 1 sprig fresh dill
  • 1/2 tsp salt
  • 1 c. water Dumplings
  • 1/2 c. flour
  • 1/4 tsp salt
  • 1 tsp baking pwdr
  • 1 x egg
  • 3/4 c. lowfat milk handful parsley

Directions

  1. Heat a saucepan over medium-high heat, add in the oil.
  2. Add in the chicken thighs and cook till browned, 2 min on each side.
  3. Add in the remaining stew ingredients, cover and simmer for 15 min.
  4. Dumplings:Combine all of the dumpling ingredients to make a lumpy dough.
  5. Drop the dough into the stew 1 tablespoonful at a time.
  6. Cover and cook for 10 min, or possibly till the dumplings are cooked through.
