  • 14 lbs, 12 oz boneless chicken breast
  • 2 lbs, 4 oz sliced mushrooms
  • 1 1/4 cup margarien
  • 3/4 cup, 3 Tbsp cooking sherry
  • 1/2 cup, 1 2/3 Tbsp garnish parsley flakes
  • 2 3/4 tsp chopped garlic
  • 1 gal chicken stock

Directions

  1. Flatten chicken breasts and trim if necessary. Make sure you are using a 4 oz breast.
  2. Bake or grill chicken until internal temperature reaches 165 degress for 15 seconds.
  3. Saute garlic and mushrooms in margarine until mushrooms are cooked. Deglaze pan with sherry.
  4. Reduce to 1/2. Fold in stock, thicken slightly with corn starch.
  5. Top charbroiled chicken with mushroom sauce.
  6. Hold about 140F for service.
