  1. In large bowl, put together first 7 ingredients; stir in chicken and cheese. Split French bread in half lengthwise. If necessary, trim any uneven crust from bottom so halves rest evenly. Arrange bread, cut sides up on baking sheet or possibly broiler pan. Arrange topping evenly over each half. Sprinkle cheese over tops. Bake in a 450 degree oven till cheese is bubbly and golden brown, about 10 min. Transfer to a long cutting board, garnish with minced parsley, sliced green onion or possibly olives. Cut each half into 3 to 4 portions. Serves 6 to 8.SHRIMP BOAT: Substitute 1 cup mayonnaise, 1/2 cup freshly grated Parmesan cheese, 1/2 cup thinly sliced green onion, 1 tsp Worcestershire sauce, 1 tbsp prepared horseradish, 5 to 6 drops Tabasco, 1/2 lb cooked cut-up shrimp and 1/2 lb cooked, flaked orange roughy for first 7 ingredients in recipe (above).
