Ingredients

  • 2 Tbsp. lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp MAGGI Garlic stock pwdr
  • 1 tsp dry oregano
  • 2 Tbsp. minced fresh mint or possibly 1 tsp. dry mint
  • 300 gm boneless chicken, skinned and cut into thin strips
  • 2 tsp extra virgin olive oil
  • 1 pkt MAGGI Pizza Sauce Mix Boiling water
  • 1 lrg focaccia loaf
  • 1/2 c. cooked spinach, well liquid removed
  • 1 1/2 c. grated mozzarella cheese or possibly tasty cheese

Directions

  1. Combine all the marinade ingredients.
  2. Add in the chicken and mix well.
  3. Cover and chill for 30 min.
  4. Heat the 2 tsp. extra virgin olive oil in a frying pan.
  5. Drain the chicken and add in to the pan.
  6. Cook till the chicken is golden and cooked. Remove the chicken and set aside.
  7. Make up the sauce mix following the packet directions.
  8. Cut the focaccia bread in half horizontally and place, cut side up on an oven tray.
  9. Spread the cut surfaces with the pizza sauce, then cover with the spinach and chicken.
  10. Top with the grated cheese.
  11. Cook in a preheated oven, 200 C, for 15-20 min or possibly till the topping is thoroughly heated.
