Ingredients
- 30 ml Extra virgin olive oil
- 1 x Onion
- 1 tsp Thyme
- 1 x Bay leaf
- 1 x Cooking apple, cored and minced
- 1 can Chestnut puree
- 300 ml Lowfat milk
- 300 ml Water
- 5 ml White wine vinegar, or possibly lemon juice Salt & freshly grnd black pepper
Directions
- 1. Heat the oil and saute/fry the onion for 2 min. Add in the thyme and the bay leaf together with three quarters of the apple, reserving the remainder for garnish. Continue cooking over a low heat till the apple is softened.
- 2. Add in the chestnut puree, lowfat milk and water and simmer for 15 min.
- Allow to cold slightly then puree in a food processor, adding the wine vinegar or possibly lemon juice and seasoning to taste. Serve warm, sprinkled with the reserved minced apple.
