Ingredients

  • 2 medium eggplants, peeled, cut into 1/2″ fingers
  • 2 eggs, beaten
  • 1 c. flour
  • 1.5 Tblsp. chicken consomme powder
  • 1 tsp. paprika
  • 4 Tblsp. Parmesan or hard cheese (hard Mexican cheese will give more of a bite)
