Directions

  1. Steam carrots in boiling salted water till tender-crisp set aside.Boil sweet potatoes with a little sugar till tender. Cook onions till golden brown in 2 tbsp of butter.
  2. In buttered baking dish, layer carrots, onion and apples and sweet potatoes. Cover with lemon juice. Heat remaining butter. Fold in bread crumbs. Sprinkle over vegetable mix.
  3. Bake at 300 degrees for 15 min or possibly till vegetables are heated through and crumbs are golden.
