Ingredients
- 1 pound carrots, peeled and cut in sticks
- 2 lg. white onions, thinly sliced into rings
- 5 T butter
- 3 lg. apples, cored and thinly sliced into rings
- 3 sweet potatoes, thinly sliced
- 1/4 c. lemon juice
- 1 c. seasoned bread crumbs
Directions
- Steam carrots in boiling salted water till tender-crisp set aside.Boil sweet potatoes with a little sugar till tender. Cook onions till golden brown in 2 tbsp of butter.
- In buttered baking dish, layer carrots, onion and apples and sweet potatoes. Cover with lemon juice. Heat remaining butter. Fold in bread crumbs. Sprinkle over vegetable mix.
- Bake at 300 degrees for 15 min or possibly till vegetables are heated through and crumbs are golden.
