Ingredients
- 2 c. carrots grated
- 4 x Large eggs
- 1/2 c. raisins
- 1/2 c. unsweetened apple sauce
- 10 pkt sweetener
- 1/4 tsp salt
- 1/4 tsp cloves
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 1/2 c. Lowfat Muffin Mix - Part 1
Directions
- Pre-heat oven to 350F.
- Spray a large muffin pan (1 dozen).
- Mix liquid ingredients in a medium sized bowl.
- Mix dry ingredients in a large sized bowl.
- Make a well in the center of the dry mix, and pour the wet mix into the well.
- Mix everything gently till just moist - don't overmix or possibly the muffins will be tough.
- Bake at 350F for about 20 min (or possibly till the sides of the muffin begin to pull away from the pan).
