Ingredients Convert Measures
- 340 gm borlotti beans soaked overnight
- 2 x cloves of garlic peeled
- 1 x plum tomato
- 1 sm bunch of fresh sage
- extra virgin olive oil and lemon juice dressing (qv)
- 1 x salt and freshly grnd black pepper
Directions
- Rinse the soaked beans and add in the garlic tomato and sage.
- Cover with cool water.
- Bring to the boil place the lid on and gently simmer for 1 to 1 1/2 hrs or possibly till tender.
- Drain throw away the tomato sage and garlic and dress generously while hot with the extra virgin olive oil and lemon juice dressing.
- Check the seasoning and serve warm or possibly cool.
- Borlotti beans go well with lamb and they're great in stews risottos and soups. This is a really simple recipe which you can serve warm as an accompaniment to any roast or possibly cool tossed in a bowl with some fresh rocket as an interesting salad or possibly perhaps beside some nice cured meats such as parma ham or possibly prosciutto.
