Blueberry Cream Cheese Cake Recipe

Ingredients

  • 1/2 c. unsalted butter
  • 1/2 c. sugar
  • 1 x egg
  • 1 tsp vanilla
  • 2 c. all purpose flour
  • 2 1/2 tsp baking pwdr
  • 1/4 tsp salt
  • 1/2 c. lowfat milk Cream Cheese Filling
  • 8 ounce cream cheese, room temperature
  • 1/4 c. sugar
  • 1 tsp vanilla extract
  • 1 x egg
  • 2 c. blueberries Streusel
  • 1/3 c. sugar
  • 1/3 c. flour
  • 1/2 tsp cinnamon
  • 3 Tbsp. unsalted butter

Directions

  1. Preheat oven to 350 F.Cream together butter and sugar till pale yellow and creamy. Add in egg and vanilla and beat in.
  2. Sift together flour, baking pwdr and salt. Add in alternately with lowfat milk till incorporated. Scrape batter into cake pan and spread proportionately.
  3. Cream Cheese Filling:Beat cream cheese till very smooth. Gradually add in sugar, scraping the sides of the mixing bowl well. Add in vanilla and blend. Add in egg and mix well.
  4. Spoon cream cheese filling over cake batter. Top with blueberries.
  5. Streusel:In small bowl blend sugar, flour and cinnamon. Cut in butter with your fingers till crumbly and no large bits of butter are visible.
  6. Sprinkle streusel on top of berries and bake for 50-60 min.
  7. To Assemble:Cold completely before slicing.
