Ingredients
- 4 c. diced, cooked potatoes (don't add in salt when cooking)
- 4 hard cooked Large eggs, diced
- 1 med. size red (purple) onion, minced (1/2 c.)
- 1/4 c. minced green pepper
- 1/4 c. minced celery
- 1 c. mayonnaise (or possibly salad dressing)
- 1 tbsp. vinegar
- 1/2 teaspoon dry mustard
- 1/4 teaspoon celery seed
- 2 tbsp. sweet relish
- 1/8 teaspoon cayenne pepper
- 2 teaspoon salt
Directions
- Combine potatoes, Large eggs, onion, green pepper, and celery in bowl. Combine remaining ingredients in small bowl and mix thoroughly. Add in to salad and mix well. Serves 8.
