Ingredients
- 2 ripe bananas, mashed
- 1 1/2 c. sugar
- 1/2 c. vegetable oil
- 2 Large eggs
- 1 teaspoon vanilla
- 1/4 c. plus 1 tbsp. buttermilk
- 1 teaspoon baking soda
- 1 3/4 c. flour
- 1 c. minced walnuts, optional
Directions
- In a medium bowl, mix bananas, sugar, oil, Large eggs and vanilla. Stir in buttermilk. In a small bowl, stir soda and flour together. Add in to banana mix. Stir in nuts. Pour into a greased 9 x 5 x 3 loaf pan. Bake at 325 degree oven for 1 hour and 20 min. Don't double recipe.
- For mini muffins; set oven to 400 degrees and bake 10 to 13 min. Makes approximately 36 muffins.
