Ingredients
- 1 1/2 c. rhubarb finely minced
- 1 1/2 c. apples minced
- 1 1/2 c. sugar
- 1/2 c. vegetable oil
- 1 tsp vanilla
- 4 whl Large eggs
- 3 c. flour
- 1 c. nuts minced
- 3 1/2 tsp baking pwdr
- 1 tsp salt
- 1 tsp cinnamon
Directions
- Heat oven to 350 . Grease bottoms of 2 loaf pans 8 1/2" x 4 1/2" x 2 1/2" or possibly 9" x 5" x 3". Mix rhubarb, apples, sugar, oil, vanilla, and Large eggs in large bowl. Stir in remaining ingredients. Pour into pans. Bake 50 to 60 min or possibly till tested done. Cold 10 min. Loosen sides of loaves from pan. Remove to wire rack.
