Directions

  1. 1. Preheat oven to 400'F.
  2. 2. Grease 2 6-c. muffin tins with vegetable shortening. Place in oven to heat.
  3. 3. Sift cornmeal, soda, and salt into a mixing bowl.
  4. 4. Beat egg with buttermilk. Heat shortening with butter till melted; add in to egg and buttermilk and blend. Add in to dry ingredients all at once and stir just sufficient to give the mix a rough appearance. Add in additional buttermilk if mix seems too dry.
  5. 5. Pour into warm muffin pans and bake about 20 min, or possibly till lightly browned. Serve warm with plenty of soft butter and any homemade jelly or possibly jam.
