Amatriciana Recipe

I absolutely love amatriciana. It's like spaghetti bolognaise on steroids. It's traditionally served over bucatini which I, for the life of me, have yet to find at the store. I usually just serve it over spaghetti or fettuccine, but you could use whatever you want.

Ingredients

  • 1 onion, minced
  • 5 strips bacon (I use bacon because pancetta is expensive, but it's traditionally made with pancetta)
  • 1 can crushed tomatoes, the small can
  • 1/2 tsp red chili flake
  • salt and pepper
  • pasta for serving

Directions

  1. Cut the bacon in chunks and cook in a skillet.
  2. Once it's almost crispy, add the onion and cook until translucent.
  3. Add the tomatoes and chili flake.
  4. Season with salt and pepper to taste.
  5. Simmer for 20 minutes while you cook the pasta.
  6. Serve over pasta.
