%20also%20managed%20to%20remember%20to%20do%20it%20next%20time%20I%20was%20in%20front%20of%20a%20computer.%3C/p%3E%3Cp%3ETurns%20out%20that%20it's%20called%20soda%20bread%20for,%20you%20guessed%20it,%20bicarbonate%20of%20soda,%20which%20is%20used%20to%20leaven%20the%20bread.%20My%20search%20turned%20up%20lots%20of%20variations%20on%20traditional%20Irish%20soda%20bread%20which%20is%20made%20with%20flour,%20baking%20soda,%20buttermilk%20and%20salt%20--%20nothing%20more%20nor%20less.%3C/p%3E%3Cp%3EI%20was%20particularly%20drawn%20to%20the%20recipes%20for%20sweet%20Irish%20soda%20bread%20with%20raisins%20since%20%22ray-ray%22%20constitute%20one%20of%20my%20son,%20Will's%20main%20food%20groups%20these%20days.%20He%20seems%20to%20have%20a%20hollow%20leg%20when%20it%20comes%20to%20%22nature's%20candy.%22%20And%20since%20that%20carton%20of%20organic%20buttermilk%20sitting%20in%20the%20fridge%20was%20not%20getting%20any%20younger,%20I%20figured,%20why%20not%20give%20it%20a%20shot?%3C/p%3E%3Cp%3EIt%20did%20not%20take%20long%20to%20mix%20up%20a%20batch%20of%20dough%20and%20get%20it%20ready%20to%20bake.%20The%20caraway%20seeds%20gave%20me%20pause%20for%20a%20moment%20but%20then%20I%20tossed%20them%20in%20and%20I%20sure%20am%20glad%20I%20did.%20The%20combination%20of%20their%20uniquely%20tangy,%20almost%20floral%20flavor%20and%20the%20straightforward%20fruity%20sweetness%20of%20the%20raisins%20is%20not%20to%20be%20missed.%3C/p%3E%3Cp%3ESoda%20bread%20is%20traditionally%20baked%20with%20a%20cross%20cut%20on%20top.%20My%20new%20blogger%20friend,%20Shannon%20Marie%20at%20Forks,%20Knives%20&%20Spades,%20offers%20up%20three%20possible%20explanations%20for%20the%20cross:%3C/p%3E%3Cp%3ETo%20help%20it%20cook%20more%20uniformly,%3C/p%3E%3Cp%3ETo%20let%20the%20faeries%20out%20prior%20to%20baking,%20or%3C/p%3E%3Cp%3ETo%20remind%20good%20Irish%20Catholics%20where%20their%20loyalties%20lie...%3C/p%3E%3Cp%3EWhatever%20the%20reason(s),%20I%20think%20it%20makes%20the%20baked%20loaf%20look%20even%20prettier.%3C/p%3E%3Cp%3EI%20busted%20out%20the%20bread%20while%20it%20was%20still%20warm%20and%20served%20chunks%20to%20our%20maple%20syrup-making%20guests,%20Daniel%20and%20Rio,%20and%20to%20Rahm%20and%20Will.%20It%20went%20over%20quite%20well.%3C/p%3E%3Cp%3EAs%20predicted,%20Will%20mostly%20picked%20the%20raisins%20out%20of%20his%20piece%20and%20ate%20them%20but%20I%20think%20I%20saw%20him%20take%20a%20few%20bites%20of%20actual%20bread,%20too.%3C/p%3E%3Cp%3ENext%20year,%20I%20hope%20to%20remember%20to%20make%20this%20bread%20BEFORE%20St.%20Patrick's%20Day.%20But%20I'm%20not%20putting%20any%20money%20on%20it%20-%20a%20swamp%20is%20a%20swamp.%3C/p%3E%3Cp%3ESweet%20Irish%20Soda%20Bread%20(a.k.a.%20Spotted%20Dick*)%3C/p%3E%3Cp%3EMakes%20one%20large%20loaf%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20With%20the%20oven%20rack%20in%20the%20center,%20preheat%20the%20oven%20to%20375%20F.%20Line%20a%20baking%20sheet%20with%20a%20Silpat%20or%20parchment%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20bowl,%20whisk%20together%20the%20flour,%20sugar,%20salt%20and%20baking%20powder.%20Add%20the%20butter%20and%20cut%20it%20in%20with%20a%20pastry%20blender%20until%20the%20mixture%20is%20the%20consistency%20of%20fine%20meal.%20Once%20at%20this%20point,%20use%20your%20hands%20to%20pinch%20and%20fluff%20the%20mixture.%20Add%20the%20raisins%20and%20caraway%20seeds%20and%20mix%20in%20with%20your%20hands%20to%20distribute.%3C/p%3E%3Cp%3E3.%20In%20another%20bowl,%20beat%20the%20egg%20with%20a%20fork,%20then%20stir%20in%20the%20buttermilk%20and%20baking%20soda.%20Make%20a%20well%20in%20the%20dry%20ingredients%20and%20pour%20in%20the%20wet%20ingredients.%20Stir%20with%20the%20fork%20until%20the%20mixture%20forms%20a%20damp%20dough.%3C/p%3E%3Cp%3E4.%20Turn%20the%20dough%20out%20onto%20a%20lightly%20floured%20surface%20and%20coat%20the%20dough%20with%20flour%20on%20all%20sides.%20Knead%20with%20you%20hands%20a%20few%20times,%20then%20flatten%20into%20a%20disk%20about%208%22%20across.%20Place%20in%20the%20center%20of%20the%20prepared%20baking%20sheet%20and,%20with%20a%20floured%20sharp%20knife,%20cut%20a%201/2%22-deep%20cross%20on%20top.%3C/p%3E%3Cp%3E5.%20Bake%20for%2045-55%20minutes.%20The%20loaf%20should%20be%20a%20deep%20golden%20brown%20and%20sound%20hollow%20when%20rapped%20with%20knuckles.%20Remove%20from%20the%20oven%20and%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3E*%20A%20note%20for%20all%20you%20sticklers%20and%20purists%20out%20there:%20technically,%20sweet%20soda%20bread%20is%20not%20actually%20considered%20Irish%20soda%20bread%20at%20all--%20it's%20considered%20an%20%22impostor%22%20that%20is%20also%20referred%20to%20as%20the%20infamous%20sounding%20%22Spotted%20Dick%22,%20%22Spotted%20Dog%22%20or%20%22Railway%20Cake.%22%20%20For%20more%20on%20this%20heated%20controversy,%20visit%20The%20Society%20for%20the%20Preservation%20of%20Irish%20Soda%20Bread%20(no%20joke!)%20I%20thought%20about%20titling%20this%20post%20
