We came up with this soup at the end of the garden season. We had an abundance of Banana Peppers and decided to start with them as a base and build a soup from there. It ended up getting alot of request for a second batch to be made when we served it to our friends, so......here's what we came up with.
Ingredients
- 10 large banana peppers
- 1 large vidalia onion
- 1 can of garbanzo beans
- 1 lb of ground beef (sirloin tip roast)
- 1 can of Hunts diced tomato's w/green pepper, celery, onion
- 1 can of corn
- 2 cans of chicken broth
- 2 cups of white minute rice
- 1 large tomato
- 1 tbls of olive oil
- 1 tbls of garlic salt
Directions
- Cut and remove seeds from banana peppers. Dice and cut peppers into 1/2 squares. Dice onions in similar fashion and combine with banana peppers in a frying. Coat lightly with olive oil and season with 1/2 table spoon garlic salt. Saute lightly.
- Brown hamburger meat while blending in 1/2 tbls of garlic salt. Combine with onions and peppers in a 4 qt. pot.
- Place on medium heat and stir in chicken broth. Add garbanzo bean, corn, tomato (quartered), hunts diced tomato's with juice.
- Bring to a boil and stir in rice. Reduce heat and simmer for 30 minutes.
- Place in bowl, let cool and enjoy.
