%3C/p%3E%3Cp%3ESimply%20Sauteed%20Baby%20Artichokes%3C/p%3E%3Cp%3EBaby%20Artichokes!%3C/p%3E%3Cp%3EYes.%20%20I%E2%80%99m%20yelling%20because%20baby%20artichokes%20are%20a%20seasonal%20gem%20that%20are%20so%20insanely%20delicious%20that%20the%20mere%20thought%20of%20someone%20not%20enjoying%20them%20simply%20because%20they%20%E2%80%98think%E2%80%99%20they%20don%E2%80%99t%20know%20how%20to%20cook%20them%20breaks%20my%20heart.%3C/p%3E%3Cp%3EDramatic?%20%20Perhaps.%3C/p%3E%3Cp%3EBut%20it%E2%80%99s%20true%20and%20I%20really%20am%20making%20it%20my%20mission%20to%20get%20them%20into%20your%20belly%20this%20season.%3C/p%3E%3Cp%3EI%20think%20the%20most%20surprising%20thing%20about%20working%20with%20baby%20artichokes%20is%20how%20much%20of%20the%20artichoke%20you%20don%E2%80%99t%20actually%20use.%20%20As%20a%20matter%20of%20fact,%20I%20think%20it%E2%80%99s%20fair%20to%20say%20that%2050%25%20of%20the%20artichoke%20gets%20thrown%20away%20when%20prepping%20and%20the%20other%2050%25%20turns%20into%20these%20little%20tender%20nuggets%20that%20won%E2%80%99t%20last%20long%20on%20a%20plate%20(at%20least%20not%20if%20they%20are%20in%20eyes%20sight%20for%20me!).%3C/p%3E%3Cp%3ESo%20if%20you%20have%20never%20worked%20with%20them%20before,%20read%20the%20directions%20below%20and%20watch%20the%20video.%20%20Let%20me%20walk%20you%20through%20this%20because%20I%20really%20want%20you%20to%20have%20the%20joy%20of%20having%20these%20little%20gems%20in%20your%20belly%20before%20their%20season%20is%20up.%3C/p%3E%3Cp%3EAnd%20if%20you%20have%20any%20questions%20or%20need%20any%20clarity,%20ASK!%20%20Remember%20what%20your%20high%20school%20teachers%20told%20you;%20there%20is%20no%20such%20thing%20as%20a%20stupid%20question.%20%20So%20ask%20away%20and%20then%20go%20enjoy!!%3C/p%3E%3Cp%3ESimply%20Sauteed%20Baby%20Artichokes%20With%20Lemon%20And%20Garlic%3C/p%3E%3Cp%3EYield:%202-4%20Servings%3C/p%3E%3Cp%3EPrep%20Time:%2010%20mnutes%3C/p%3E%3Cp%3ECook%20Time:%2010%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%2020%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20extra%20virgin%20olive%20oil,%20lemon%20juice,%20garlic,%20and%20a%20kiss%20of%20salt.%3C/p%3E%3Cp%3ETrim%20your%20artichokes.%20%20Cut%20off%201/3%20from%20the%20top%20of%20the%20artichoke,%20trim%20the%20stem%20and%20then%20remove%20any%20and%20all%20tough%20outer%20leaves.%20%20You%20will%20need%20to%20remove%20more%20leaves%20than%20you%20think,%20just%20keep%20going%20until%20you%20see%20the%20tender%20inner%20leaves%20that%20are%20a%20nice%20light%20pale%20green.%3C/p%3E%3Cp%3ESlice%20the%20artichoke%20in%20half%20and%20add%20to%20the%20lemony%20olive%20oil%20mixture%20being%20sure%20to%20toss%20each%20half%20around%20so%20it%20is%20lightly%20coated%20in%20the%20lemony%20goodness.%20%20*Once%20the%20artichokes%20are%20exposed%20to%20oxygen%20they%20quickly%20oxidize%20(aka%20turn%20black)%20so%20take%20your%20time%20but%20try%20to%20work%20as%20quickly%20as%20possible;).%3C/p%3E%3Cp%3EOnce%20you%20have%20all%20the%20artichokes%20prepped,%20heat%20a%20medium%20non-stick%20saut%C3%A9%20pan%20over%20a%20medium-high%20heat.%20%20Toss%20artichokes%20and%20the%20lemony%20olive%20oil%20mixture%20into%20the%20pan%20and%20season%20with%20salt%20and%20pepper.%20%20Cook%20for%20about%203%20minutes%20or%20until%20the%20artichokes%20are%20lightly%20browned,%20add%20a%20splash%20of%20water%20to%20the%20pan%20and%20cook%20for%20another%202%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20lid%20and%20flip%20all%20the%20artichokes,%20add%20another%20splash%20of%20water%20to%20the%20pan%20and%20cover%20for%202-3%20minutes%20again.%20%20Remove%20the%20lid%20and%20allow%20the%20rest%20of%20the%20water%20to%20evaporate%20while%20artichokes%20get%20a%20nice%20light%20browning%20on%20the%20opposite%20side.%3C/p%3E%3Cp%3EYour%20artichokes%20are%20done%20when%20they%20can%20be%20easily%20pierced%20with%20a%20fork%20or%20knife.%3C/p%3E%3Cp%3EServe%20with%20fresh%20lemon%20and%20enjoy!%3C/p%3E){kind=link}
