A quick cooking Mexican dish that really stretches the use of 1 pound of ground beef.

  • 2 Tbsp olive oil
  • 1 lb ground beef
  • 1 large onion
  • 2 tsp chipotle chile powder
  • 1 14oz can tomatoes, salsa-style-fire-roasted-diced
  • 1 14 oz can black beans
  • 2 small yellow squash, diced
  • 1 small head of cabbage, shredded
  • Juice of two limes
  • salt, pepper
  • shredded cheese, for topping
  • greek yogurt, for topping

Directions

  1. Heat olive oil in a non-stick skillet. Add onions and beef, mix well. Add chipotle powder, dask of salt and pepper, and cook for 7 minutes.
  2. Add diced squash, black beans, and tomatoes. Mix well. Cook another 7 minutes.
  3. Toss shredded cabbage with lime juice, salt, and pepper. This can be done while everything is cooking. Longer it sets, the better it gets.
  4. Place cabbage slaw on your plate. Top with beef mixture. Top with cheese, and a dollop or two of greek yogurt. You can also use sour cream.
