taste great all alone or as a pie!! we have it both way's!!

Ingredients

  • 21/2 cups Fine sugar(to make Super fine sugar,put regular sugar into a food processor for 1 minute)
  • 1 cup bottled lemon juice
  • 3/4 cup butter cut-up & chilled
  • 7 large egg yolks
  • 4 large whole eggs
  • Using a double boiler & a mixing bowl on top,get the water to boiling on the bottom pan,making sure it doesn't boil over into the top mixing bowl.Combine all eggs whisking & add sugar a little at a time,whisking well.
  • Add the lemon juice,stir till combined & smooth.
  • On the double boiler,stir in the butter,cook till the temperature reaches 170 degrees,about 15 minutes.
  • When you get close to the correct temp. the curd will start to thicken.Remove from double broiler & set on counter~~stir about 5 minutes until it looks like pudding!

Directions

  1. place in 4 (1/2 pint) jars & store in ice-box or fill jars leaving a 1/2 inch head-space,add jars to a water-bath for 5 minutes.Take jars out & place on counter & listen for the "Ping" that the jars have sealed!!!
  2. ENJOY!!!
