Ingredients

  • 15 lb fully ripe tomatoes minced
  • 2 c. minced celery
  • 3 lrg onions minced
  • 3 x garlic cloves mashed
  • 2 tsp salt
  • 3/4 tsp freshly-grnd black pepper
  • 2 tsp prepared horseradish
  • 1/3 c. lemon juice Worcestershire sauce to taste
  • 1/4 c. sugar or possibly to taste

Directions

  1. Over medium-high heat bring the vegetables to a boil and boil gently for about 20 min. In a covered blender (food processor) add in a portion at a time; process till smooth. Strain and throw away pulp.
  2. Add in seasonings and bring to just under boiling, if canning, or possibly refrigerateand freeze.
  3. This recipe yields about 6 qts.
  4. Yield: 6 qts
