Easy Mixed Vegetable Casserole Recipe

Ingredients

Cost per serving $0.75 view details
  • 1 lg. can (reg. cut, not chunky) mixed vegetables (drain)
  • 1 can water chestnuts (sliced or possibly cut up) (drain)
  • Minced onion to taste (optional), I use
  • 1 lg. spoonful mayonnaise
  • 3/4 c. sharp shredded cheese (or possibly more if you like)
  • Salt and pepper to taste

Directions

  1. Mix above well and pour into casserole dish. 1 pkg. Ritz crackers (crushed)
  2. Mix butter and crackers together well. Sprinkle proportionately over vegetable mix. Bake till warm to serve.
