Ingredients

  • 3/4 lb Grnd turkey
  • 1 x Eggplant
  • 1 c. Salsa
  • 1 can Tomato paste
  • 1/4 c. Fresh parsley
  • 1 tsp Chili pwdr
  • 1 tsp Grnd cumin
  • 1 tsp Dry oregano
  • 1 pkt Frzn corn
  • 4 x Pita bread
  • 1/2 c. Yogurt
  • 2 c. Lettuce
  • 1/2 c. Olive
  • 1/2 c. Cheddar cheese

Directions

  1. Combine turkey, eggplant, salsa, tomato paste, parsley, chili pwdr, cumin, oregano and corn in slow cooker. Cover and cook on low 5 to 6 hrs. Stir with a fork to break up large chunks of turkey. Spoon about 3/4 c. cooked turkey mix on each pita half. Top with yogurt, lettuce, olives and cheese, if you like.
