- 2 tbs Worcestershire sauce
- 1/2 tsp garlic powder
- lettuce – for 2 main salads Romaine (Cos)
- 1 avocado
- 2 tbs Parmesan, freshly grated, for sprinkling
- extra anchovy filets for garnish optional
- Caesar Dressing:
- 1 tbs Dijon mustard
- 1 tbs lemon juice
- 1 tbs tarragon white wine vinegar
- 2 tsp Worcestershire Sauce
- 2 anchovy filets, mashed or 1 tsp anchovy paste
- 1/2 cup (4oz, 125gr) Greek or plain yogurt
- 2 tbs salad olive oil
- 1 tbs snipped fresh chives
- 1/2 tsp garlic powder

%20on%20the%20side.%3C/p%3E%3Cp%3EThis%20salad%20is%20mine.%3C/p%3E%3Cp%3EMon%20mari%20is%20in%20charge%20of%20the%20traditional%20Caesar%20Salad.%3C/p%3E%3Cp%3EHe%E2%80%99s%20been%20making%20it%20since%20the%20beginning%20of%20time%E2%80%A6.%20and%20he%20always%20uses%20the%20traditional%20raw%20egg.%3C/p%3E%3Cp%3EMany%20people%20are%20now%20concerned%20about%20raw%20eggs%20and%20the%20threat%20of%20salmonella.%3C/p%3E%3Cp%3EI%20was%20once%20told%20that%20more%20people%20die%20in%20Spain%20in%20the%20summertime%20from%20salmonella%20than%20from%20car%20accidents.%3C/p%3E%3Cp%3EIf%20you%20have%20ever%20driven%20in%20Spain%20you%20would%20you%20would%20appreciate%20the%20horror%20of%20that%20statement.%3C/p%3E%3Cp%3EThe%20basis%20is%20as%20follows:%3C/p%3E%3Cp%3EMany%20dishes%20in%20Spain,%20especially%20in%20summer,%20are%20served%20with%20mayonnaise%20on%20the%20side.%3C/p%3E%3Cp%3EThe%20mayonnaise%20is%20always%20made%20in-house.%3C/p%3E%3Cp%3EThe%20mayonnaise%20is%20normally%20in%20a%20large%20bowl,%20on%20the%20table;%20successive%20diners%20helping%20themselves.%3C/p%3E%3Cp%3EThe%20mayonnaise%20is%20made%20fresh%20for%20lunch%20and%20again%20for%20dinner.%3C/p%3E%3Cp%3EIt%E2%80%99s%20hot%20in%20Spain%20in%20summer.%3C/p%3E%3Cp%3EIf%20you%20eat%20by%20American%20standards,%20say%20dinner%20at%207pm,%20you%20are%20having%20a%20late%20lunch%20by%20Spanish%20standards%E2%80%A6.%20In%20other%20words,%20you%20are%20finishing%20off%20the%20mayo%20made%20for%20a%20Spanish%20lunch%20that%20has%20been%20sitting%20on%20the%20table%20for%205%20hours.%3C/p%3E%3Cp%3EI%20recently%20read%20on%20a%20blog%20that%20mayonnaise%20is%20not%20as%20risky%20as%20we%20have%20been%20led%20to%20believe.%3C/p%3E%3Cp%3ESo%20which%20is%20it?%20%20Fatal%20killer%20or%20misunderstood%20condiment?%3C/p%3E%3Cp%3EBoth,%20it%20turns%20out.%3C/p%3E%3Cp%3ECommercial%20mayonnaise%20is%20made%20with%20pasteurized%20eggs%20with%20lots%20and%20lots%20of%20bacteria-killing%20acids%20like%20lemon%20juice%20and%20vinegar.%20%20It%20actually%20makes%20your%20salads%20safer%20than%20they%20would%20be%20without%20the%20mayo.%3C/p%3E%3Cp%3EHome-made%20mayonnaise%20should%20be%20handled%20with%20more%20care%20as%20the%20acid%20levels%20aren%E2%80%99t%20as%20high%20and%20the%20eggs%20are%20normally%20not%20pasteurized.%3C/p%3E%3Cp%3EThat%20brings%20us%20to%20the%20eggs.%3C/p%3E%3Cp%3EAre%20they%20really%20just%20salmonella-laden%20time%20bombs%20waiting%20to%20go%20off%20at%20first%20taste?%3C/p%3E%3Cp%3EI%20thought%20this%20would%20be%20a%20simple%20question%20to%20answer.%3C/p%3E%3Cp%3EWhat%20I%20discovered%20is%20that%20there%20are%20rather%20a%20lot%20of%20sources%20giving%20different%20opinions%20but%20all%20proclaiming%20to%20be%20right.%3C/p%3E%3Cp%3EOpposite%20statements%20are%20rarely%20both%20true.%3C/p%3E%3Cp%3EOpposite%20opinions%20even%20less%20often.%3C/p%3E%3Cp%3EThe%20following%20is%20what%20I%20think%20is%20true%20about%20eggs:%3C/p%3E%3Cp%3EMany%20parts%20of%20the%20world%20do%20not%20refrigerate%20eggs.%20The%20eggs%20are%20not%20washed%20prior%20to%20sale.%20There%20is%20a%20protective%20coating%20naturally%20on%20eggs%20to%20keep%20out%20harmful%20bacteria%20and%20to%20help%20preserve%20the%20egg.%20%20If%20this%20coating%20is%20not%20washed%20off%20refrigeration%20is%20not%20required.%3C/p%3E%3Cp%3EIn%20the%20US%20eggs%20are%20washed%20prior%20to%20sale%20and%20they%20should%20be%20refrigerated.%3C/p%3E%3Cp%3EThe%20following%20is%20what%20I%20think%20about%20the%20rest%20of%20the%20hype:%3C/p%3E%3Cp%3ESalmonella%20can%20be%20present%20both%20on%20the%20surface%20of%20the%20shell%20and%20internally.%3C/p%3E%3Cp%3ETrue%E2%80%A6.%20But:%3C/p%3E%3Cp%3EAs%20to%20the%20bacteria%20on%20the%20shell:%20If%20there%20is%20chicken%20shit%20on%20your%20egg%20%E2%80%93%20wash%20it%20%20before%20you%20crack%20it.%3C/p%3E%3Cp%3EIf%20you%20buy%20your%20eggs%20from%20organic%20farmers%20and%20/%20or%20farmers%20that%20humanely%20keep%20their%20chickens%20there%20is%20a%20significantly%20reduced%20risk%20of%20the%20eggs%20containing%20salmonella%20internally%20as%20there%20is%20less%20chance%20that%20the%20chickens%20will%20be%20infected.%3C/p%3E%3Cp%3ENo%20one%20should%20eat%20raw%20or%20under-cooked%20eggs.%3C/p%3E%3Cp%3EThe%20same%20part%20of%20the%20world%20that%20doesn%E2%80%99t%20refrigerate%20their%20eggs%20also%20eats%20them%20raw.%20%20It%E2%80%99s%20been%20like%20that%20for%20years%20and%20no%20one%20seems%20particularly%20worried%20about%20it.%3C/p%3E%3Cp%3EI%20certainly%20understand%20why%20people%20in%20certain%20higher-risk%20groups%20would%20want%20to%20avoid%20raw%20eggs.%3C/p%3E%3Cp%3EBut%20according%20to%20one%20US%20site%20the%20risk%20of%20a%20contaminated%20egg%20is%201%20in%2020,000.%3C/p%3E%3Cp%3EThe%20conclusion?%3C/p%3E%3Cp%3EI%E2%80%99m%20happy%20with%20my%20eggs.%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20worried%20about%20yours,%20try%20to%20buy%20them%20at%20the%20farmer%E2%80%99s%20market%20%E2%80%93%20and%20ask%20the%20farmer%
