This is an excellent soup. I used lima beans because that is what I had on hand, but any white bean would work just as well. I also used my electric pressure cooker to cook it in. This appliance is one of my favorite cooking tools.
Ingredients
- 16 oz. of dry lima beans
- 9 cups water
- 1/2 to 1 lb. of bacon
- 1 large onion chopped
- 3 stalks celery chopped
- 1 16 oz can of diced tomatoes
- 1 32 oz. container of chicken broth
- Salt and pepper to taste
Directions
- Place beans and water together in pressure cooker. Set to low pressure for 30 minutes. When finished, drain beans. Discard water.
- Fry Bacon to your desired consistency. Break up in pieces.
- Saute onion and celery in small amount of bacon drippings.
- Add beans, vegetables, seasonings and chicken broth to pressure cooker. Cook on low pressure for 10 minutes. Enjoy!
