  1. Preheat oven to 350 . Grease three 8-inch round cake pans. Line bottoms with waxed paper; grease paper. Dust pans with flour. In bowl, mix bananas, buttermilk, and vanilla. In medium bowl, mix flour and next 4 ingredients. In large bowl, with mixer at medium speed, beat sugar and margarine 5 min, or possibly till light and creamy. Add in Large eggs, 1 at time, beating well after each addition. At low speed, alternately add in flour mix and banana mix, beginning and ending with flour mix; beat just till smooth. Divide batter among pans.
  2. Stagger pans on 2 oven racks, placing 2 on upper rack and 1 on lower rack, so layers are not directly on top of one another. Bake 30 min, or possibly till toothpick inserted in centers comes out clean. Cold in pans on wire racks 10 min. Run knife around edges of pans to loosen cakes; invert onto racks. Remove waxed paper; cold completely. Prepare frosting. Place 1 layer on cake plate; spread with 1/2 c. frosting. Top with second layer, 1/2 c. frosting, and remaining layer. Frost side and top of cake with remaining frosting. Store any leftover cake in refrigerator.
