Venison Chops In Foil

Ingredients

  • 8 tender venison chops, 1/2 inch thick
  • 2 sm. onions, minced fine
  • 1 stick butter
  • 8 med. mushrooms, sliced
  • 2 tbsp. chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh grnd black pepper
  • Heavy aluminum foil
  • 8 slices cool boiled ham
  • 8 tbsp. lowfat sour cream

Directions

  1. Heat 1/2 butter in large heavy skillet and saute/fry the chops for 10 min. Transfer to a heated plate and keep hot. Heat remaining butter in skillet and saute/fry onions, mushrooms and parsley till golden brown. Salt and pepper.
  2. Turn off heat and prepare foil packets. Cut 8 pcs of foil, each 10 x 14 inches. On each piece, place in center one piece of ham; top with a venison chop. Add in a generous Tbsp. mushroom mix and 1 Tbsp. lowfat sour cream. Seal. Place in 350 degree oven for 20 min. Serve in foil.
