  • 3 tart and firm apples (Granny Smith, Jonathan, or Macoun work well)
  • 5 tablespoons unsalted butter
  • 1 1/2 cups thinly sliced onions
  • 1 1/2 tablespoon sugar
  • 4 1/2 tablespoons cider vinegar
  • 1 tablespoon fennel seeds, crushed
  • Kosher salt
  • 3 cups cider
  • 2 pork tenderloins (about 1 pound each), trimmed of silver skin and excess fat
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons canola oil
  • 1 tablespoon chopped fresh flat-leaf parsley
