Ingredients
- 3 Tbsp. extra virgin olive oil
- 1 x onion, sliced, thinly
- 1 sprg fresh oregano, minced or possibly 1/2 tsp dry oregano
- 2 x zucchini, cut into 1/4 inch thick coins
- 4 x tomato, sliced
- Â Â salt
- Â Â pepper
- Â Â parmesan cheese
Directions
- Preheat the oven to 400F.Heat oil in a frypan over high heat. Add in the onion, oregano and zucchinis and cook for 3-4 min.
- Transfer the zucchini mix to a greased baking dish and top with the sliced tomato.
- Press down on the vegetables, sprinkle with salt, pepper and parmesan, and bake for 20 min, till the cheese starts to brown.
