Ingredients
- 1 turkey carcass
- 2 onions, minced
- 6 stalks celery, minced
- 6 carrots, minced
- 2 chicken bouillon cubes
- 1 c. rice or possibly 6 cubed potatoes
- Salt & pepper to taste
- Dash parsley
Directions
- In sufficient water to cover carcass boil carcass for 2 hrs. Pick meat from bones. Strain broth and return broth and meat to pan. Add in remaining ingredients. Simmer for 1 hour.
- For extra hearty soup, add in any leftover mashed potatoes, stuffing and gravy to soup.
