Tamale Pie With Raisins Recipe

Ingredients

  • 1 1/2 lb Beef, cut in 1/2 inch cubes
  • 5 Tbsp. Veg. oil
  • 2 med Onions, sliced
  • 3 x Cloves garlic, chopped
  • 1 1/2 tsp Salt
  • 2 Tbsp. Chili pwdr
  • 20 ounce Canned tomatoes, sieved, 2 1/2 c.
  • 1 1/2 c. Pitted ripe olives, coarsely cut
  • 1 c. Raisins
  • 2 tsp Salt
  • 1 1/2 tsp Chili pwdr
  • 6 c. Boiling water
  • 2 c. Yellow corn meal
  • 1/2 c. American or possibly cheddar cheese, shredded

Directions

  1. Brown beef in warm oil; add in onion and garlic. Cook till golden brown; add in 1 1/2 tsp. salt, 2 Tbsp. chili pwdr, tomatoes, olives and raisins.
  2. Cook slowly 1 1/2 hrs.
  3. In a separate kettle, make cornmeal mush by combining remaining salt and chili pwdr with boiling water; slowly add in corn meal, stirring constantly.
  4. Cook 15 min.
  5. Line a greased 2 1/2 qt baking dish with a 1 inch layer of mush. Pour in meat filling. Spread remaining mush on top. Bake at 325*F. for 1 1/2 hrs.
  6. Sprinkle shredded cheese last 15 min.
  7. Yield: 6 to 8 servings.
