.%20%20Since%20we%20arleady%20have%20some%20Black%20Bean%20and%20Sweet%20Potato%20Chili%20in%20the%20freezer,%20I%20needed%20to%20figure%20out%20some%20other%20way%20to%20use%20them.%20%20Soups%20and%20casseroles%20were%20on%20the%20menu%20for%20the%20week,%20so%20it%20would%20be%20a%20while%20before%20I%20would%20be%20serving%20anything%20that%20could%20use%20sweet%20potatoes%20as%20a%20side%20dish.%3C/p%3E%3Cp%3EI%20decided%20to%20try%20something%20new%20and%20threw%20together%20a%20really%20quick%20and%20easy%20sweet%20potato%20soup.%20%20Since%20we%20already%20had%20meals%20planned%20for%20the%20week,%20I%20only%20ate%20a%20small%20serving%20of%20this%20along%20with%20a%20salad%20and%20some%20leftover%20omelet%20before%20putting%20the%20rest%20of%20the%20soup%20into%20the%20freezer%20for%20another%20night%20in%20the%20future.%20%20I'm%20bummed%20that%20I%20didn't%20get%20a%20picture%20before%20freezing%20it,%20but%20I%20wanted%20to%20share%20the%20recipe%20with%20you%20now%20anyway.%3C/p%3E%3Cp%3ESweet%20Potato%20Soup%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20or%20dutch%20oven,%20cook%20diced%20bacon%20to%20desired%20done-ness.%20%20(I%20cooked%20mine%20until%20is%20was%20almost%20crisp.)%3C/p%3E%3Cp%3ERemove%20bacon%20from%20pan%20and%20set%20aside%20on%20paper%20towels%20to%20absorb%20the%20grease.%20%20Do%20not%20drain%20grease%20from%20pot.%3C/p%3E%3Cp%3EAdd%20chopped%20veggies%20to%20bottom%20of%20pot%20in%20the%20hot%20bacon%20grease%20and%20cook,%20stirring%20often,%20until%20vegetables%20are%20tender.%3C/p%3E%3Cp%3ERemove%20vegetables,%20straining%20as%20much%20of%20the%20grease%20as%20possible,%20set%20aside.%3C/p%3E%3Cp%3EDrain%20grease%20from%20pot.%3C/p%3E%3Cp%3ETo%20the%20pot,%20add%20chicken%20broth,%20evaporated%20milk,%20and%20salt%20and%20pepper%20to%20taste%20and%20allow%20to%20cook%20over%20medium%20heat%20until%20bubbly.%3C/p%3E%3Cp%3EAdd%20in%20the%20pre-cooked%20sweet%20potatoes,%20vegetables%20and%20bacon.%3C/p%3E%3Cp%3EMix%20until%20well-combined.%3C/p%3E%3Cp%3ECover%20and%20reduce%20heat.%20%20Allow%20to%20simmer%20for%2015-20%20minutes,%20stirring%20often.%3C/p%3E%3Cp%3EIf%20you%20like,%20lightly%20mash%20the%20potatoes%20with%20a%20hand%20masher.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EI%20really%20enjoyed%20this%20soup.%20%20It%20was%20so%20easy%20and%20so%20pantry%20friendly.%20%20The%20vegetables%20I%20used%20in%20the%20soup,%20were%20odds%20and%20ends%20left%20after%20chopping%20the%20veggies%20I%20needed%20for%20other%20recipes.%20%20The%20rest%20of%20the%20ingredients%20I%20had%20in%20the%20pantry.%3C/p%3E%3Cp%3EThis%20recipe%20has%20been%20linked%20to%20the%20following%20blog%20carnivals%20and%20linky%20parties:%3C/p%3E){kind=link}
