Ingredients

  • 8 1/2 x Inch Medallion of Smoked Pork loin
  • 8 slc Tomato
  • 8 slc Red onion
  • 1/2 head Green or possibly savory cabbage, shredded
  • 12 x Sweet habanero peppers, julienned
  • 1/2 c. Country style Dijon mustard
  • 1/4 c. Oil and vinegar salad dressing
  • 1 tsp Salt
  • 1 tsp Blackpepper
  • 1/2 c. Sorghum Molasses
  • 1/2 c. Balsamic vinegar
  • 1 Tbsp. Chili pwdr

Directions

  1. Cut thick (1/2") slices of tomato and red onion and grill, basting them with oil and vinegar as needed, grill only till slightly charred and barely tender.
  2. Combine slaw ingredients and chill. (save habanero trimmings and seeds for sauce)
  3. Combine sauce ingredients and cook to reduce to 1/2 c. total sauce
  4. To assemble: Place an individual portion of slaw in middle of each pile.
  5. Place, in alternating layers, pork, tomato, pork, onion, pork. Drizzle sweet habanero sauce reduction over stack. Garnish top of stack with thinly julienned sweet habanero.
