Strawberry Glazed Chicken Thighs Recipe

Ingredients

  • 8 chicken thighs
  • S&P for taste
  • Paprika for taste
  • Olive Oil
  • Strawberry Basil Glaze:
  • 1 tablespoon Strawberry jam
  • 2 sprigs fresh basil, chopped
  • 2 cloves of garlic, crushed and chopped
  • Juice of ½ a lemon
  • Zest of ½ a lemon
  • S&P
  • 1 teaspoon vinegar

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients for glaze, mixed well and set aside.
  3. Clean chicken thighs, pat dry and lay out on a baking pan. Sprinkle salt, pepper and paprika over each thigh and drizzle about 1/2 teaspoon olive oil over each chicken thigh.
  4. Bake chicken for about 30 minutes. Take out of the oven and brush each thigh with glaze. Place back in the oven and let finish cooking for at least 10 more minutes.

    I love using jams as a way to create a quick glaze for chicken and pork. Made this last night and it was great! Only thing I did differently was cooked the chicken for 60 minutes. At the temperature setting in the recipe, the thighs seemed to be about half cooked at 30 minutes. I glazed the chicken in the last 10 minutes just like the recipe and they turned out just fine.

      Catherine. I too use jellies and jams for many recipes. It give the dish an uplifting taste. Jams are great with most chicken recipes. I also cook chicken close to an hour. Don't like red showing inside.. Try jams on pork also. J. Gino Genovesi
