Ingredients

  • 1/3 c. Honey
  • 1/3 c. White wine vinegar
  • 3 Tbsp. Dijon mustard
  • 3/4 c. Mild, light-flavored extra virgin olive oil
  • 3/4 c. Water
  • 2 Tbsp. Poppy seeds
  • 7 c. Minced, sliced, or possibly diced
  •     steamed vegetables see * Note

Directions

  1. Note: Vegetable possibilities include; broccoli; cauliflower; yellow crookneck squash; potatoes; green beans; asparagus; Brussels sprouts; corn; carrots; winter squash; red bell peppers; peas; pumpkin; green bell peppers; lima beans.
  2. Combine honey, vinegar, mustard, extra virgin olive oil, water, and poppy seeds in a blender.
  3. Pour vinaigrette over the warm vegetables.
  4. Serve warm or possibly chilled.
  5. This recipe serves 4.
