Spinach Calzone Recipe

My last recipe for our month of healthy alternatives to favorite foods is one that created itself. Using ingredients that I had on hand I came up with this tasty treat one Saturday for lunch. It was easy and satisfying and tasted wonderful.

Directions

  1. Heat olive oil in skillet. Saute spinach and garlic for approximately 10-15 minutes until the flavors begin to meld and the water is cooked out of the spinach. Remove from heat and mix in the feta cheese. Spray a small (8×8) casserole dish with cooking spray. Lay 5 of the dough sheets in the bottom of the dish. Place the spinach mixture in the middle of the dough sheets sprinkle with the Parmesan cheese. Place the remaining 5 dough sheets on the top. Fold the edges of the bottom layer of Phyllo dough over the top edges of dough and roll/pinch to seal. Bake in a 350 degree oven for approximately 30 minutes or just until the dough begins to crisp up and turn golden brown.
