Ingredients

  • 1 c. ripe cantaloupe melon balls
  • 1 c. ripe honeydew melon balls
  • 1/2 c. finely minced red bell pepper
  • 3 Tbsp. finely minced red onion
  • 3 Tbsp. minced fresh basil
  • 3 Tbsp. seasoned rice wine vinegar
  • 1/2 x lime juiced
  • 2 Tbsp. sugar
  • 1/4 tsp grnd cayenne pepper

Directions

  1. 1. Place the melon, pepper, red onion and basil in a large bowl. Combine remaining ingredients in a smaller bowl.
  2. 2. Just before serving, pour the liquid over the melon.
  3. Description: "Thai lemon basil."
  4. NOTES : Serve this melon dish with roast duck or possibly pork.
