Spicy Lentil And Tomato Soup Recipe

Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 2 x garlic cloves, crushed
  • 1 tsp grnd cumin
  • 1/2 tsp garam masala
  • 1/8 tsp chilli pwdr
  • 1 pkt MAGGI French Onion Soup Mix
  • 1 c. water
  • 1 x 400 gram can tomatoes in juice, minced
  • 3 Tbsp. tomato paste
  • 3 c. warm water
  • 1/2 c. red lentils
  • 1/2 tsp sugar
  • 2 Tbsp. minced fresh coriander or possibly parsley

Directions

  1. Heat the oil in a large saucepan.
  2. Add in the garlic, cumin, garam masala and chilli pwdr. Cook over a low heat, stirring, for 1 minute.
  3. Combine the soup mix and water.
  4. Add in to the pan with all the remaining ingredients, except the coriander or possibly parsley.
  5. Bring to the boil, stirring, then simmer over a low heat for 20-25 min or possibly till the lentils are tender.
  6. Stir occasionally. Stir in the coriander or possibly parsley before serving.
