Ingredients
- ¼ cup vegetable or canola oil

- 2 cups roasted and lightly salted pecans (peanuts could also be substituted)
- 1 cup brown sugar

,%20and,%20perhaps%20most%20importantly,%20will%20not%20cause%20you%20to%20have%20a%20holiday-induced%20postal%20breakdown.%3C/p%3E%3Cp%3EThis%20is%20a%20tricky%20balance%20to%20strike.%20%20To%20my%20knowledge,%20none%20of%20my%20homemade%20gifts%20have%20gotten%20the%20freezer%20treatment,%20but%20I%20have%20overextended%20myself%20in%20the%20home%20gift%20department%20more%20than%20once.%20%20Take%20my%20plan%20to%20make%20Christmas%20cookies%20for%20all%20my%20colleagues%20one%20year.%20%20What%20could%20be%20easier%20than%20baking%20cookies?%20It%20seemed%20foolproof%20until%20halfway%20through%20baking%20when%20the%20power%20went%20out%20in%20my%20apartment%20from%20a%20winter%20storm.%20%20I%20maintained%20my%20composure%20when%20I%20had%20to%20toss%20one%20batch%20of%20cookies%20in%20the%20trash.%20%20It%20was%20only%2010%20pm%20and%20%20I%20hadn%E2%80%99t%20lost%20hope.%20%20I%20found%20candles,%20lit%20them%20and%20my%20gas%20burners,%20and%20set%20about%20melting%20chocolate%20over%20a%20double%20boiler.%3C/p%3E%3Cp%3ESomewhere%20around%2010:30%20pm%20as%20the%20temperature%20in%20my%20drafty%20apartment%20started%20to%20drop,%20I%20learned%20what%20it%20means%20to%20have%20your%20chocolate%20seize.%20%20I%E2%80%99m%20not%20sure%20how%20I%20got%20water%20into%20the%20chocolate,%20but%20it%20worked%20its%20magic%20turning%20my%20bowl%20of%20beautifully%20melted%20chocolate%20into%20a%20stiff,%20completely%20ruined%20mass.%20%20This%20being%20in%20my%20pre-culinary%20school%20days%20I%20had%20no%20idea%20what%20had%20just%20happened.%20%20I%20gathered%20what%20little%20determination%20I%20had%20left,%20rinsed%20out%20the%20bowl,%20and%20started%20again%20only%20to%20have%20the%20same%20thing%20happen%20(I%20didn%E2%80%99t%20dry%20the%20bowl).%20%20At%20this%20point,%20I%20must%20have%20blacked%20out%20from%20despair%20and%20rage%20as%20I%20don%E2%80%99t%20remember%20anything%20else.%20%20%20I%20do%20remember%20that%20my%20cookie%20tins%20each%20contained%20about%203%20cookies;%20the%20rest%20of%20the%20cookie%20tin%20being%20filled%20with%20candy%20from%20the%20grocery%20store.%3C/p%3E%3Cp%3EYet%20another%20year,%20I%20decided%20homemade%20pasta%20was%20going%20to%20be%20our%20gift%20of%20choice%20to%20friends,%20neighbors,%20and%20family%20members.%20%20%20It%E2%80%99s%20a%20testament%20to%20my%20stubbornness%20and%20my%20husband%E2%80%99s%20willingness%20to%20make%20me%20happy%20in%20those%20giddy%20early%20days%20of%20marriage%20that%20we%20endured%20three%20full%20days%20of%20pasta%20making.%20%20Flour%20dusted%20everything,%20pasta%20lay%20drying%20on%20every%20available%20surface%20(including%20laid%20out%20on%20towels%20on%20our%20guest%20bedroom%20bed),%20and%20Lady,%20the%20only%20happy%20creature%20in%20our%20home%20at%20that%20point,%20joyfully%20scampered%20around%20the%20house%20scarfing%20down%20unattended%20pasta.%20%20%20If%20that%20wasn%E2%80%99t%20bad%20enough,%20the%20real%20kicker%20came%20when%20I%20started%20receiving%20reports%20that%20our%20pasta,%20while%20having%20arrived%20safely%20at%20destinations%20all%20over%20the%20country,%20had%20shattered%20into%20a%20million%20pieces%20during%20transit.%20%20We%20have%20not%20done%20pasta%20as%20a%20gift%20since%20and%20I%20became%20a%20firm%20believer%20in%20Murphy%E2%80%99s%20Law%20when%20it%20comes%20to%20good%20deeds.%3C/p%3E%3Cp%3EWhich%20brings%20me%20to%20caramel%20popcorn.%20%20%20A%20gift%20of%20this%20sweet%20and%20spicy%20snack%20mix%20could%20not%20be%20simpler%20to%20make,%20will%20not%20break%20the%20bank,%20and%20can%E2%80%99t%20be%20thrown%20in%20a%20freezer.%20%20There%20are%20tons%20of%20recipes%20for%20caramel%20popcorn%20on%20the%20internet,%20but%20realizing%20all%20that%20was%20at%20stake%20I%20found%20a%20trustworthy%20recipe%20from%20Paula%20Deen%20%20and%20proceeded%20to%20kick%20it%20up%20a%20notch%20with%20roasted%20pecans%20and%20cayenne%20pepper.%20%20It%E2%80%99s%20a%20keeper.%20%20Sure%20to%20be%20a%20hit%20with%20friends%20and%20family%20and%20stress-free%20enough%20to%20make%20you%20actually%20start%20to%20believe%20that%20homemade%20gifts%20are%20the%20way%20to%20go.%20%20Happy%20cooking!%3C/p%3E%3Cp%3EAdapted%20from%20Paula%20Deen%E2%80%99s%20recipe%20for%20Grandma%20Paul%E2%80%99s%20Caramel%20Corn%3C/p%3E%3Cp%3EMakes%20about%2014%20cups%3C/p%3E%3Cp%3EWhile%20I%20wouldn%E2%80%99t%20put%20a%20lot%20of%20faith%20in%20a%20recipe%20for%20caramel%20corn%20from%20Jacques%20Pepin,%20I%20assumed%20that%20Paula%20Deen%20knew%20her%20stuff%20when%20it%20came%20to%20this%20sticky%20sweet%20treat.%20%20My%20assumption%20was%20correct%20and%20the%20final%20product%20was%20gift%20worthy%20and%20stress%20free.%20%20I%20added%20pecans%20and%20cayenne%20to%20kick%20things%20up%20a%20notch.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20225%20degrees.%20%20Spray%20two%20baking%20sheets%20generously%20with%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20heat%20the%20vegetable%20oil%20over%20medium%20high%20heat.%20%20Add%20one%20popcorn%20kernel%20and%20place%20the%20lid%20slightly%20askew%20(to%20allow%20the%20steam%20to%20escape)%20on%20top.%20%20When%20the%20kernel%20pops,%20add%20the%20rest%20of%20the%20kernels%20and%20cook,%20shaking%20occasionally%20and%20with%20the%20cover%20askew,%20until%20all%20of%20the%20kernels%20have%20popped.%20%20Remove%20the%20lid%20and%20pour%20the%20popcorn%20into%20a%20large%20bowl%20with%20the%20pecans.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%20the%20brown%20sugar,%20unsalted%20butter,%20corn%20syrup,%20salt%20and%20cayenne.%20%20Bring%20to%20a%20boil%20and%20cook%20for%205%20minutes.%20%20Remove%20from%20the%20heat%20and%20stir%20in%20the%20baking%20soda.%3C/p%3E%3Cp%3EImmediately%20pour%20the%20butter%20mixture%20over%20the%20popcorn%20and%20pecans%20and%20use%20spoons%20to%20toss%20until%20well%20coated.%20Divide%20the%20mixture%20between%20the%20two%20baking%20sheets%20and%20spread%20out.%20%20Bake%20for%201%20hour,%20stirring%20the%20mixture%20every%2015%20minutes.%20%20Remove%20from%20the%20oven%20and%20let%20cool%20before%20stuffing%20into%20bags%20or%20tins%20for%20gift%20giving.%20%20%20Store%20in%20an%20airtight%20container%20for%20up%20to%202%20weeks.%3C/p%3E){kind=link}
