Smoked Salmon & Capers over Linguine Recipe

Ingredients

  • 1 4-oz. Smoked Salmon Fillet (I use Echo Falls Cajun Flavor found near the fish counter at my local grocery store)
  • 1 Green Pepper, sliced in thin strips
  • 1 Yellow Pepper, sliced in thin strips
  • 3 tbs. Olive Oil
  • 3 tbs. Capers
  • 1 cup Cherry Tomatoes, cut in half
  • 1 lb Linguine, cooked to taste
  • Parmesan cheese, for topping
  • Salt, for pasta water and to taste

Directions

  1. Boil salted water and cook noodles to taste. Drain and cover, set aside.
  2. Heat large saute pan. Add olive oil, capers, peppers, cherry tomatoes, and cook until tender, not soft and should still be bright in color.
  3. Add salmon and heat through.
  4. Add pasta to pan and warm through.
  5. Serve in large bowl and top with cheese if desired.
