Smoked Pork Chop Lentil Bake

Ingredients

  • 1 c. minced onion
  • 1 clove garlic, chopped
  • 2 tbsp. veg. oil
  • 2 1/2 c. water
  • 1 1/2 c. dry lentils
  • 2 med. carrots, minced
  • 2 tbsp. snipped parsley
  • 2 teaspoon instant chicken bouillon granules
  • 1 bay leaf
  • 6 smoked pork chips (1 1/2 lbs.)
  • Snipped parsley (optional)

Directions

  1. In a 2 qt saucepan, cook onion and garlic in oil till onion is tender but not brown. Add in water, lentils, carrots, parsley, bouillon granules, and bay leaf; bring to boiling. Reduce heat. Cover and simmer 30 min. Remove pan from heat. Remove and throw away bay leaf. Spoon mix into a 12 x 7 1/2 x 2 inch baking dish; arrange pork chops atop. Cover and bake at 350 degrees for 25 min. Uncover, bake 15 min more. Top with additional parsley if you like. Makes 6 servings.
